A healthy marmalade treat made from pumpkin and apples

Natural healthy marmalade can be made from rice and pumpkin. Round-grain rice is ideal for this, but its presence in the dessert is not so easy to guess. But pumpkin, apples and orange give the dessert a bright look and taste, and dates serve as a natural sweetener.

And if the finished marmalade is not rolled in sugar, the dessert will turn out to be super healthy and dietary. If you have a sweet tooth, sprinkle the marmalade with powdered sugar.

Ingredients

  • Round rice – 2 tbsp.
  • Pumpkin (pulp) – 300 g
  • Apples (peeled) – 300 g
  • Orange – 1 pc.
  • Dates – 50 g
  • Gelatin – 30 g
  • Cinnamon – 1/2 tsp.
  • Sugar for sprinkling (optional)

Preparation:

  1. Rinse the rice, pour water in a ratio of 1 part rice to 2 parts water. Boil the rice until it is a viscous consistency and rub it through a sieve or grind it with a blender.
  2. Pour the gelatin with a small amount of water and let it swell.
  3. Cut the pumpkin and apples into cubes and put them in a saucepan. Squeeze the juice from the orange, add it to the pumpkin and apples. Add the dates and cinnamon. Simmer under a closed lid over low heat until the pumpkin softens.
  4. Add to the total mass of rice. Beat everything with a blender until it is smooth.
  5. Heat the gelatin in a water bath until it becomes smooth and add it to the total mass. Stir until the gelatin dissolves.
  6. Pour the mass into molds or into one large flat plate and then cut into pieces. Leave in the refrigerator for 2-3 hours (preferably overnight), until completely solidified.
  7. If desired, roll the marmalade pieces in sugar or powdered sugar.
