— Processed cheese is regular cheese that has interacted with phosphates. High-quality processed cheese is just as healthy as hard cheese. Phosphates are safe in small amounts. However, if you eat processed cheese in excessive amounts, from half a kilogram per day, there is a risk that the phosphates contained in it will interact with the human body and begin to leach calcium.
The expert focused on counterfeits. She explained that unscrupulous manufacturers, of which there are not so many today thanks to the efforts of regulatory organizations, can offer a cheese product under the guise of cheese.
— Good cheeses, especially processed cheeses, cannot be cheap. Milk is an expensive raw material. As a rule, to make the product cheaper, soy, palm oil, and transgenic fats are added to it – vegetable fats that have been passed through hydrogen and made solid. These fats are not very useful for humans.
Elena Solomatina recommended paying attention to the expiration date of processed cheese when buying. Products with a long shelf life contain many preservatives. The nutritionist also advised choosing a product with a natural, dull color.
A rich orange or pink hue, she says, indicates the addition of artificial coloring. Flavorings are not useful, as are fractions of natural products, such as pieces of ham, mushrooms, or pickles. The expert said that such inclusions reduce the shelf life, and to increase it again, a preservative is added to the cheese.
The doctor noted that the danger is another danger of processed cheese – it is a high-calorie product, its fat content reaches 60 percent. For people suffering from obesity or atherosclerosis, cheeses are shown only in extremely small quantities, because they contain cholesterol. According to the doctor, those who have problems with metabolism can eat only one small sandwich with processed cheese during the day. At the same time, it is not necessary to pre-grease the bread with butter, as some gourmets do.
— It should be remembered that sharp, spicy varieties of processed cheese contain an increased amount of salt. And it is contraindicated in hypertension, which, in turn, is associated with atherosclerosis. I also recommend that those who have problems with calcium replace processed cheese in their diet with regular hard cheese due to the phosphates I have already mentioned. You should be careful with the amount of processed cheese eaten if you have kidney problems or uric acid metabolism.
According to the dietician, there are no products that “react” or “act as a catalyst” when consuming processed cheese.
— Except that you shouldn't eat fatty foods with processed cheese, it will be “butter butter”. Cheese has both protein and fat. Even alcohol in combination with cheese does not make it dangerous. Moreover, processed cheese slows down the absorption of alcohol and slightly softens the effect of alcohol, you can snack on processed cheese! – the doctor joked.

Solomatina advised eating processed cheese in combination with whole grain bread made from wholemeal flour, as well as with vegetable salads.
