A simple recipe for Brazilian carrot cake

Carrot cake is a simple and delicious dessert! The preparation of the dough is very simplified and basically boils down to mixing the components and combining them with flour.
We will get a beautiful, fluffy cake in the color of the sun, carrots, pumpkins or autumn leaves… And the grated peel of an orange or lemon and chocolate glaze will add elegance to it.
Ingredients for the dough:
- 250 ml of sunflower oil
- 220 g of granulated sugar
- 4 eggs
- 3 pcs. medium-sized carrots (about 300-350g)
- 300g wheat flour
- peel of 1 orange/lemon
- 2 teaspoons of baking powder
Preparation:
All ingredients should be at room temperature.
Pour oil into a container, add sugar, eggs, and sliced carrots. Grind everything in a blender until a homogeneous mass is obtained. Sift the wheat flour and baking powder directly into the mixture and add the zest. Mix everything with a wooden spatula to combine the components.
Line a 25 cm diameter form with baking paper and pour the dough into it. Bake at a temperature of 170 ° C for about 40 minutes. Remove from the oven, cool.
After cooling, pour thick chocolate glaze.
Chocolate glaze:
- 150 ml of milk
- 30 g of honey or sugar syrup
- 100 g of dark chocolate
< li>15 g of butter
Melt all the ingredients in a water bath (constantly stirring ) until a homogeneous mass is formed. Remove from heat, cool and spread over the prepared cake.
