3. Egg casserole with squid and broccoli

This recipe will definitely appeal to those who adhere to a healthy diet and want to diversify their diet. The dish has a balanced KBZHU, so you don't have to worry about your figure.

We will need:

  • 3 medium or large chicken eggs
  • 1-2 squid
  • 1 broccoli
  • a little olive oil
  • salt and pepper to taste

First, boil the squid. Place the cleaned carcasses in boiling water for 2-3 minutes. It is important not to overcook the seafood, so that it does not become tasteless, hard and rubbery. Set the boiled squid aside to cool and while you work on the rest of the ingredients.

Boil the broccoli in salted water for about 10 minutes. While the vegetable is cooking, separate the whites from the yolks, for this dish we will only need the whites – add salt, pepper, your favorite dried herbs to them, beat with a whisk until fluffy.

We suggest you prepare an oriental egg dish for breakfast called shakshuka! There are many variations of preparing shakshuka, but we will cook it according to the classic recipe. For 2 servings we will need:

  • 4 chicken eggs
  • 1 medium onion
  • 3 ripe tomatoes
  • 1 bell pepper
  • 1-2 cloves of garlic
  • olive oil
  • a little fresh herbs – cilantro, parsley
  • ½ teaspoon cumin and turmeric
  • for piquancy and spiciness, half a chili pepper
  • salt and pepper to taste

Chop the onion as finely as possible, fry in a frying pan over low heat until soft and golden brown. Cut the bell pepper into thin strips or small cubes, add to the onion. Increase the heat and simmer for another 5 minutes. Add chili pepper, garlic, seasonings, salt and ground black pepper to the fried vegetables. Simmer for another 5 minutes, not forgetting to stir.

While everything is frying, blanch the tomatoes. It is very simple – make a cross-shaped incision on the tomato, lower the vegetable for 1-2 minutes in boiling water, then immediately in ice water. After such simple manipulations, the skin will come off very easily. Wipe or finely chop the pulp, send it to the frying pan to the other ingredients. Let everything simmer together over low heat for another 8-10 minutes until thickened, until the excess liquid evaporates.
