Fragrant vanilla pumpkin and almond cupcake

You will enjoy such a fragrant cupcake with tea or coffee. It smells delicately of vanilla and is prepared with the addition of fresh pumpkin.

Ingredients

The following products are required for preparation:

  • almond flour – 1.5 tbsp.;
  • baking powder — 1 tsp;
  • eggs — 2 pcs.;
  • coconut sugar — 0.5 tbsp.;
  • coconut oil — 2 tbsp.;
  • vanilla extract — 1 tsp.;
  • grated fresh pumpkin — 200 g.

How to cook

Start by preheating the oven to 180 degrees. The bottom of the mold should be covered with parchment, and the edges should be greased with oil.

Now we make the dough. Mix together the almond flour and baking powder. Separately, beat the eggs and sugar until light in color. Add the coconut oil and vanilla extract. Now all the ingredients can be mixed together until smooth. Pour into the mold. Bake the cupcake at 180 degrees for 45 minutes. Do not remove the finished cupcake from the mold immediately. Let it stand for 10 minutes. Enjoy when it has cooled completely. Delicious!
