However, you shouldn't do this until the pie has cooled down.

The fact is that using a knife too quickly will cause the pastry to become moldy and turn from a lush dish into a flat, unappetizing dish.

So you shouldn't rush. Especially since your family won't be able to eat a pie that's too hot.

But if you still need to cut the pie right away, you need to prepare the knife in a certain way. The tool should be doused with very hot liquid, and then thoroughly wiped with a clean and dry towel.
