What is the secret of frying?

It's simple. Use parchment. This method was often used by students who did not have an oven, but wanted to cook meat as if in the oven.

You need to put high-quality parchment on a dry frying pan. Then lay out what you want to cook – meat or fish. If you marinated it beforehand, try to keep the moisture to a minimum so that the parchment doesn't soften right away.

Cook over low or medium heat, as high heat can cause the parchment itself to burn.

The first way is to cook with the parchment open, periodically turning the pieces over. The second way is to completely wrap the product in the paper and turn it from side to side with it.
