Why do chefs add regular ice to minced meat?

Even if you cook the cutlets on the grill or in a regular frying pan, place an ice cube in the middle of the beef, pressing it in a little.

The ice will melt and prevent the minced meat from drying out.

The taste of the cutlets will not be particularly affected, but if you are worried, you can use frozen butter or frozen milk.
