Why does buckwheat turn bitter after cooking and how to avoid it

It is quite difficult to spoil buckwheat porridge and other buckwheat dishes, and if something happens to the taste, then the manufacturer or supplier of the cereal is most often to blame. The finished groats start to taste bitter either because the variety is not of high quality or because it has been stored in storage for a long time.
Why does buckwheat taste bitter?
- Firstly, an unscrupulous manufacturer could have mixed fresh raw materials with old ones, and then all the groats will be spoiled.
- Secondly, the groats will definitely spoil if they were stored incorrectly and the shelf life and expiration date have passed.
- Thirdly, the groats could have been poorly cleaned, and small flakes will cause an unpleasant aftertaste.
To avoid possible troubles, do not chase “cheapness”, but buy groats only from trusted suppliers.
What to do with bitter buckwheat
It is not necessary to throw away the product. It is enough just to process it correctly.
At a minimum, you need to rinse the groats thoroughly, and not in cold water, as usual, but in boiling water.
After a short heat treatment, the groats will have an unpleasant aftertaste.
