1. Choose fresh or high-quality frozen fish
A good herring has a silvery skin, elastic meat and a fresh smell. If you use frozen fish, defrost it slowly, leaving it in the refrigerator overnight.
2. Use coarse salt
Finely ground salt dissolves too quickly and can penetrate the fish unevenly. Coarse salt adds salt gradually, ensuring a uniform taste. For 1 liter of brine, use 2-3 tbsp. l. of salt.
3. Add spices for flavor
Black peppercorns, bay leaves, coriander, cloves and even dill are great for salting. Spices can be used both in the brine and rubbed on the fish before marinating.
4. Use high-quality brine
Add salt, sugar (1 tbsp. l. for flavor balance) and spices to a liter of water. Boil the brine, cool to room temperature and only then pour over the fish.
5. Give it time to infuse
Herring needs time to salt: after 2-3 days in the refrigerator, it will acquire a delicate and balanced taste. If you want a richer taste, leave the fish in the brine for 4-5 days.
