1. Choose the right flour
The dough is the basis of any pizza, so the quality of the flour matters. Use flour with an average gluten content (11–12%). It will ensure the elasticity of the dough, which is easy to roll out and does not tear.
2. Let the dough “rest”
The dough should rest after kneading. It is best to leave it in the refrigerator for a few hours, or even better, overnight. This approach allows the gluten to open up and the flavor to become richer.
3. Don't overdo it with the sauce
Sauce is an important element of pizza, but too much of it can make the dough soggy. Use a thin layer of sauce made from fresh tomatoes or tomato paste with the addition of garlic and basil.
4. Use quality cheese
