A delicious sauce with sour cucumbers, like a tartare

Gucumber sauce is a homemade interpretation of the famous tartare Suitable for meat, fish, potatoes or even as a dressing for salads. Its refreshing and slightly sour taste can emphasize any dish, adding an interesting aroma to it.
Ingredients for homemade tartar:
- 4 sour cucumbers (small size)
- 150 g of sour cream or yogurt
- 1 tablespoon of Dijon mustard
- 1 clove of garlic
- 1 tablespoon of lemon juice
- Salt and pepper to taste
- Greens (dill, parsley) as desired
If the cucumbers are very salty or have a sharp taste, they can soak a little in cold water before grinding. This will soften the taste of the sauce, but will not deprive it of its characteristic sourness.
First, finely grate the sour cucumbers on a grater or grind them in a blender. If the cucumbers release a lot of juice, squeeze them slightly. Add sour cream or yogurt, mustard, finely chopped garlic and lemon juice to the chopped cucumbers. Mix well.
Add salt and pepper to taste. If you want to add flavor, you can chop some fresh herbs – they will emphasize the freshness of the sauce. Let the sauce infuse in the refrigerator for 15-20 minutes so that all the flavors combine.
