The researchers concluded that a high-fat diet causes hyperalgesia — a neurological change that is the transition from acute pain to chronic pain — as well as allodynia, which is pain that occurs as a result of stimuli that normally do not cause pain.

The team of scientists looked for saturated fatty acids in the blood of mice fed a high-fat diet and found that a type of fatty acid called palmitic acid — the most common saturated fatty acid in animals — binds to a specific receptor on nerve cells. a process that leads to inflammation and mimics neuronal damage.

Foods high in saturated fat include:

  • Butter, ghee, shortening, lard, coconut oil, and palm oil
  • Cakes and cookies
  • Fatty cuts of meat, sausages, and bacon
