But to get the most out of potatoes, it's important to cook them properly. Studies show that the best option is a baked vegetable. In addition, an important step is the process of its cooling. “To get stable starch, it's best to let the cooked potatoes cool for at least a few hours in the refrigerator,” Boyers added.
