A recipe for a delicious peach shortcrust pastry pie

Ingredients

400 g flour
180 g butter
50 g of powdered sugar
a pinch of salt
75 ml of cold water

Filling:

1.5 kg of peaches
130 g of sugar
40 g of corn starch
juice of one lemon
cinnamon
vanilla

Preparation:

Flour with butter, powder and rub salt into crumbs. The butter should be immediately from the refrigerator so that it rubs well on a grater.  Add water, knead the dough. Divide it into 2 parts. Wrap in film and put in the refrigerator.

For the filling, peel the peaches and cut them.  Mix them with all the other ingredients.

Roll out one half of the dough, put it in a mold. Put the filling. Then roll out the second half and cut into strips of the same thickness up to 2 cm. Place the strips on the cake, interweaving them. Brush with yolk and sprinkle with sugar.

Put to bake in the oven at a temperature of 180 degrees for 1 hour. Delicious!
