Ingredients:
500 g of dried fruits and nuts (total weight)
150 g of raisins
150 g of dried apricots
50 g of cranberries
150 g of chopped walnuts
50 g of almond flakes
rum/cognac
Preparation:
Chop the dried fruits, pour alcohol and add the zest of one orange. Leave in a dark place for 5 days, stirring once a day.
Dough:
30 g of pressed fresh yeast
100 g of sugar
200 ml of milk
200 g of butter
2 eggs
0.5 tsp. salt
700 g of sifted flour
1 tsp. spices (cinnamon, cardamom, nutmeg)
For greasing the stollen:
100 g butter
200 g powdered sugar
Prepare the dough:
Add pressed yeast, 1 tbsp. sugar and 3 tbsp. flour from the total amount to warm milk. Leave in a warm place under a closed film so that the yeast activates. In a separate bowl, beat the eggs with sugar and add to the risen dough, also add melted butter, spices, salt and mix everything well. Pour in the sifted flour in portions, knead a soft elastic dough (it should not stick to your hands).
Add the soaked dried fruits, chopped nuts and mix everything thoroughly. Form a loaf and divide into 3 parts. Form a stollen from each and place on parchment. Leave for another 20 minutes in a warm place to rise.
Bake in a preheated oven to 180 degrees for 45-50 minutes until golden brown. Baking time depends on your oven. Brush the hot stollen with butter and sprinkle generously with powdered sugar to keep them fresh longer.
Leave to infuse for 5-10 days. Enjoy!
