A recipe for stewed hake on a vegetable pillow

Hake is a fish with tender meat that is perfect for stewing. Properly cooked hake is juicy, aromatic, and light in taste. Stewing allows you to preserve its texture, and also saturates the dish with different flavors.
Ingredients:
- 1 kg of hake fillet
- 1 onion
- 1 carrot
- 2-3 cloves of garlic
- 2 tablespoons of tomato paste
- 200 ml of water or broth
- 2 tablespoons of vegetable oil
- Salt, pepper to taste
- Bay leaf and herbs for flavor
First, you need to prepare the vegetables. Cut the onion into half rings, and grate the carrots. In a heated frying pan with oil, fry the onion until golden brown, then add the carrots and simmer together for a few more minutes.
Cut the hake fillet into portioned pieces, season with salt and pepper. After that, add the fish to the vegetables in the pan. Then add the tomato paste and water or broth so that the fish is stewed in the liquid. Throw in the bay leaf and simmer over medium heat for about 20-25 minutes.
Tip: to prevent the fish from falling apart during cooking, stir it carefully and do not overcook it. Simmer over low heat to preserve the texture.
For more flavor, you can add a few cloves of garlic and your favorite spices, such as thyme or oregano. Braised hake goes well with a side dish of potatoes, rice or vegetables.
