A simple and very hearty eggplant and pepper salad in soy sauce

Ingredients

2 eggplants
1 tsp. salt
1 bell pepper
parsley
oil
Sauce:
3 tbsp. l. oil
3 tbsp. l. soy sauce
1 tsp. paprika
2 tsp. sesame
1 tsp. sugar
juice of half a lemon
2-3 cloves of garlic

Preparation:

Take 2 eggplants, clean them and cut them into strips. Transfer them to a bowl, add a teaspoon of salt, mix well and leave for 10-15 minutes. Meanwhile, chop the bell pepper and parsley.

After that, dry the eggplants with a paper towel. Pour oil over them and fry in a dry frying pan until done on medium heat, stirring constantly. Transfer the finished eggplants to a bowl, add chopped pepper and parsley.

 Sauce: mix oil, soy sauce, paprika, sesame, sugar, juice of half a lemon and 2-3 cloves of squeezed garlic . Mix everything well and pour over the vegetables. Combine all ingredients and refrigerate for 30-40 minutes. After that you can taste.
