A simple recipe for potato zrazy with mushrooms

How to combine tender potatoes and aromatic mushrooms in one dish? Zrazy is a great way to use up leftover mashed potatoes, creating a hearty and flavorful lunch or dinner. The dish has deep roots in Ukrainian cuisine, and even the simplest recipe can surprise with its taste.

Ingredients:

  • Potatoes – 500 g
  • Egg – 1 pc.
  • Flour – 100 g
  • Peppers (or wild mushrooms) – 200 g
  • Onion – 1 pc.
  • Salt and pepper – to taste
  • Oil for frying

First, prepare the filling: fry the finely chopped mushrooms together with the onion until golden brown. Let them cool so that the zrazy are easy to shape. If you use wild mushrooms, don’t forget to boil them first — this will make them more tender and safe to eat.

For the dough, boil the potatoes and mash them. Add an egg, salt and a little flour for plasticity. When forming zrazy, remember that the dough should be soft, but not sticky to your hands, so use a minimum of flour.

Form a small cake from potato dough in the palm of your hand, put a spoonful of mushroom filling and carefully pinch the edges. Fry the zrazy in a heated frying pan until golden brown. To make the dish less high-calorie, you can bake the zrazy in the oven.

It is interesting that potato zrazy was popular even during peasant holidays, as it combined affordable products and created a feeling of satiety.
