A simple recipe for vegetable stew “Five”

Autumn gives us many vegetables that are easy to prepare various dishes. Some of them are light, dietary and at the same time tasty. Among them is vegetable stew.

To prepare it, we take 5 eggplants, 5 sweet bell peppers (preferably red), 5 onions, 5 large tomatoes and 2 small zucchini.

Cut the eggplants lengthwise into 8 pieces (bars), salt and forget about them for 0.5-1 hour. In the meantime, cut the zucchini into cubes, pepper slices, onion into half rings.

Into a cauldron or other vessel with a rough bottom, pour 200 ml of oil, throw in the washed eggplants, a finely chopped head of garlic and put it on the fire for 20 minutes.

Then we add chopped peppers, onions, tomatoes, zucchini and stew for another 20 minutes.

At the end, you can add a little salt. And if you want to close it for the winter, add 100 g of vinegar and put it in hot, sterilized half-liter jars. If you are going to eat now, you do not need to add vinegar.

Everything is very simple and tasty!
