Step-by-step recipe for making lemon and basil cupcakes
Ingredients:
- Flour – 360 g
- Sugar – 240 g
- Butter – 240 g
- Yogurt (kefir) – 200 g
- Eggs – 4 pcs
- Lemon juice – 1 pc
- Lemon peel – 4 pcs. Basil – 30 g. Baking powder – 23 g.
It is better to rub the peel on sugar. The essential oils from the peel will absorb into the sugar and the cake will be more fragrant
- Put the sugar in a bowl and rub the lemon peel on top. Add the juice of one lemon, finely chopped basil and all the eggs. Mix with a whisk until smooth.
2. Melt the butter in a microwave oven and pour it into the egg mass, stirring constantly. We sift the flour together with the baking powder, add yogurt (you can kefir) and mix until smooth. The dough is ready.
3. Bake in an oven heated to 150 ° C for about 40-50 minutes. I check readiness with a dry match. After baking, let the cake cool a little and remove it from the mold.
The cupcake can be served immediately while it is still hot, but it is still better to give the cupcake time to ripen.
To do this, you need to wrap the cupcake in baking paper and put it in the cold for 3-4 hours. During this time, the cake will thicken, but will remain as tender and crumbly. It's time to try it.
