In winter, it's nice to open a jar with something tasty. We offer you to cook eggplants, which are perfectly combined with garlic and greens. Tasty and aromatic.
Ingredients
The following products are required for preparation:
- eggplants – 1 kg;
- greens (parsley, dill) – a big bunch;
- garlic — head;
- vinegar 9% – 2 tablespoons;
- salt – 1 tbsp;
- water – 1 l.
How to cook
Wash the vegetables and prepare the rest of the ingredients. Cut off the stalks of the eggplants and make slits on the sides. They need to be sent to boiling water for blanching for 25 minutes. Wash the finished eggplants with cold water and put them under a press to drain the liquid. It should stand like this for about 15 minutes.
Grind the greens and garlic. Mix them with salt. Now you need to put this mass in the eggplants as a filling. Put in jars, pour vinegar in portions. It is necessary to sterilize for 15 minutes, if 0.5 l cans. 1 liter cans are sterilized for 25 minutes. Roll up the lids. Delicious!
