An original side dish for meat and fish dishes: pickled beet tops

Don't throw away the beautiful beet tops. You can make a very original side dish from them, which can be served with fish and meat dishes. It can also be used to prepare first courses.
Ingredients
The following products are required for preparation:
- beet tops with stems — 1 kg;
- salt — ½ tbsp.;
- garlic — 5 cloves;
- dill — 7 umbrellas;
- blackcurrant leaves — 0.5 l.
How to cook
Wash the beet tops and cut them into pieces. Put them in a saucepan in layers. Alternate each of them with a layer of currant leaves, dill umbrellas and chopped garlic. Sprinkle lightly with salt.
Cover the saucepan with a cloth. You need to put a plate or wooden board on top and something heavy – oppression.
Place the pan in a room with room temperature. It should start to ferment. Then take it out to the cold. The pickled tops will become an unusual and original side dish that can be served with fish dishes, as well as meat. Delicious!
