Autumn salad recipe with beets and goat cheese

Autumn gives us beets, which can be the basis for a light and at the same time elegant salad. Try different combinations to find your favorite. Goat cheese reveals the taste in a special way.

Ingredients:

  • beetroot (baked or boiled) – 2 pcs.;
  • goat cheese – 100 g;
  • arugula or spinach – 50 g;
  • walnuts – 50 g;
  • olive oil – 2 tbsp. l.;
  • balsamic vinegar – 1 tbsp. l.;
  • honey – 1 tsp. l.

Beetroot is cut into thin slices, goat cheese – into small pieces. Place the greens on a plate, add beets, cheese, and chopped nuts on top.

Mix olive oil with balsamic vinegar and honey, and pour the dressing over the salad.

Interestingly, beets go well with the salty flavor of goat cheese, and the nuts add a nice texture to the dish.
