Budget cookies on pickled cucumber

After eating delicious pickled cucumbers, don't pour out the brine, because you can make delicious low-calorie cookies from it. By the way, you can eat it even during fasting.
Details
To make cookies you will need:
Cucumber pickle – 1 cup
Refined oil – 1 cup
Sugar – 1 cup
Coconut flakes – 2 tbsp
Flour – 2-3 cups
Immediately mix the pickle, oil, sugar, half of the coconut flakes (i.e. 1 tbsp) and flour. The dough should be soft and not stick to your hands.
Roll it out to a thickness of 0.5 cm, cut out shapes with cookie cutters. Sprinkle with coconut flakes while rolling. You can use poppy seeds, lemon zest, candied fruits, raisins, finely chopped dried apricots, sugar, or nothing at all if you want a simpler cookie.
Bake in the oven at 180 degrees for 5-8 minutes.
If desired, you can sprinkle dried orange peels on top, previously ground in a coffee grinder.
