Budget crispy biscuits in brine for tea

Did you know that you can make delicious cookies, using the usual brine from pickled cucumbers or tomatoes? A budget and simple version of homemade baking will pleasantly surprise you. When you don't have eggs or milk at hand, but you want to cook something quick and tasty, use this recipe.
To make pickled cookies, you will need:
- 150 ml of brine

- 100 ml of vegetable oil
- 200 g of sugar
- 1 teaspoon of soda
- 400 g of flour
- Vanilla sugar or cinnamon for flavor (optional)
First, mix the brine, oil and sugar in a deep bowl. Mix well so that the sugar is completely dissolved.
Add baking soda (do not extinguish, as the acid of the brine activates the baking soda itself) and flour. Knead the dough, which should be soft and elastic.
Roll out the dough to a thickness of about 1 cm, cut out figures using molds or a glass. Put the cookies on a baking sheet covered with parchment and bake at 180°C for 15-20 minutes until golden.
Interesting fact: the brine contains salt and acids that give the cookies unexpected but pleasant taste. This ingredient makes the dough tender and crispy at the same time.
