Calories have nothing to do with it: scientists have found a new explanation for obesity

U.S. scientists , Canada and Denmark proposed an alternative hypothesis that explains the process of obesity.
The novelty of the approach in studying the problem of excess weight is that its authors call the cause of obesity not the number of calories consumed, but the chemical composition of food in the modern world.
So, according to their hypothesis, the consumption of food with a high glycemic index leads to excessive accumulation of fat. In the course of the work, the scientists came to the conclusion that the high amount of such food in the life of a modern Western person causes hormonal changes that change the metabolic process.
“When we eat highly processed carbohydrates, the body increases the secretion of insulin and inhibits glucagon secretion. This, in turn, signals fat cells to accumulate more calories, leaving less energy to feed muscles and other metabolically active tissues,” explained Dr. David Ludwig.
He added that this type of eating involves receiving a signal from the brain about the lack of nutrients, which prompts the body to signal a feeling of hunger.
