Ellen Steinberg notes that the chemistry of onions simply does not support bacterial growth. The vegetable's low acidity and low protein content mean that onions are not well-suited for the growth of microbes, viruses or other pathogens. In fact, on the contrary, onions contain compounds that have antibacterial properties.

According to the National Onion Association, the myth that onions are poisonous comes from several different sources, including popular belief. Experts note that chopped onions can be stored in the refrigerator in an airtight container for up to 7 days. It becomes dangerous only if mold appears on it.

The only thing to worry about when eating onions is salmonella or other viruses that can be spread through toxic fertilizers. But the risk of such infection is very small and no greater than that of any other product grown on earth.
