Classic pumpkin soup

Classic pumpkin soup continues to enjoy unwavering success, despite the fact that a huge number of variations of this dish have appeared recently. The reasons for the adherence to the traditional version are quite obvious! Pumpkin soup is prepared quite simply, quickly and does not require expensive ingredients. And it can be served on the table not with cream, but with ordinary sour cream from the store. But, despite its democratic nature, classic pumpkin soup turns out to be very satisfying and tasty, so almost everyone likes it!

INGREDIENTS:

  • 700 ml vegetable broth
  • 800 g pumpkin
  • 1 medium onion
  • 2 cloves garlic
  • 2 tbsp. olive oil
  • 4 tbsp. heavy cream/sour cream
  • 1/4 tsp. ground coriander
  • a pinch of nutmeg if desired
  • salt, ground white pepper
  • pumpkin seeds

Step-by-step recipe

Peel the pumpkin for soup, remove the seeds and cut into slices. Peel the onion and garlic. Crush the garlic with the flat side of a wide knife, cut the onion into thin half rings.

Step 2

Heat the olive oil in a saucepan and fry the onion cut into half rings over high heat, 5 minutes. Reduce the heat to medium, add the garlic and continue frying for another 3 minutes.

Add the pumpkin to the saucepan, season with ground coriander and white pepper. Add a little salt and pour in the broth. Bring to a boil and cook for 20 minutes under the lid over low heat.

Remove the pumpkin soup from the heat and puree with an immersion blender until smooth. If desired, the soup can be passed through a fine sieve.

Step 5

Pour the classic pumpkin soup into serving plates. Drizzle with olive oil and pour over cream and garnish with pumpkin seeds. Serve immediately.

USEFUL TIP
You can make the taste of classic pumpkin soup more delicate and refined by adding a small amount of milk or low-fat cream (10%) to the dish at the end of cooking.

TO THE POINT
Preparing the soup will be easier if you purchase peeled pumpkin pulp, which is usually sold in airtight packaging. All you have to do is open it and use it.
