Classic San Sebastian cheesecake that melts in your mouth

Festive San Sebastian cheesecake is a dish that impresses from the first spoonful, although it doesn't look “pretty”. The burnt crust and creamy texture inside make it a special dessert that has won the hearts of gourmets around the world.

Ingredients:

  • cream cheese (like cream cheese) — 600 g;
  • sugar — 150 g;
  • eggs — 4 pcs.;
  • cream (33%) — 250 ml;
  • flour — 30 g;
  • vanilla sugar — 1 tsp.

It all starts with choosing a quality cheese. It should be soft and fresh to ensure a creamy texture. In a bowl, mix the cheese with sugar and beat until smooth. Then add the eggs one at a time, mixing thoroughly each time. The cream is gradually added, and the flour is sifted directly into the mixture to avoid lumps.

The baking dish is lined with parchment paper, and the mixture is poured into the middle. The cheesecake is baked at 200°C for 40-50 minutes. The top should be golden brown, creating a contrast with the tender middle.
