Ingredients

For preparation, you need to prepare the following components:

  • gelatin – 28 g;
  • cocoa – 85 g;
  • water – 380 ml;
  • powdered sugar – 100 g;
  • glucose syrup – 185 g;
  • sugar – 450 g;
  • < li aria-level="1">milk chocolate – 150 g.

How to prepare

Cover the baking form with cling film. It is better to take a square one with sides of 25 cm, but check availability. Fill the quick-dissolving gelatin with water (160 ml). Let it stand for 10 minutes.

Bring 60 ml of water to a boil and mix with 35 g of cocoa. Mix the rest of the cocoa with powdered sugar.

At the next stage, you need to put 160 ml of water on fire and add sugar and glucose syrup. It takes several minutes to heat everything together. Check whether the ball rolls from the formed syrup. To do this, drop the hot syrup into a glass of cold water. If the mass is plastic and forms a ball, the syrup is ready. If not, you need to cook it.

Put the gelatin in a bowl and beat it with a mixer. At the same time, pour the syrup in a thin stream, which should be hot. Continue to beat, but now add the previously prepared cocoa and water to the mass. You need to beat for another 10 minutes.

As a result of beating, the mass should become quite airy and white. Melt the chocolate and add it to it. Mix with a spatula, not a mixer. Then pour into a mold.

Do not put in the refrigerator. Marshmallows should sit at room temperature for 8 hours or more. When you take it out of the mold and free it from the film, let the second side also be in the air for 2-3 hours.
