Some claim that refrigeration destroys the bonds between the cells of the vegetable, and the cold destroys enzymes. In the refrigerator, fruits supposedly become softer. Others, on the contrary, say that tomatoes retain their taste, shape and texture for the longest time in a dark, cold place.

The vast majority of chefs claim that cooling fully ripe fruits not only extends the shelf life, but also does not affect the taste.

However, only fully ripe fruits can be stored in the refrigerator. Unripe tomatoes should be kept in a warm room until fully ripe.

Cooks get the best results if they cut the fruits and place them in an airtight container. Therefore, cold is undesirable only for unripe tomatoes, since in this case they can remain unripe for a long time. For ripe fruits, the refrigerator does not pose any danger.
