Fragrant and spicy Japanese-style rice in a hurry

Fragrant, rich, spicy, for dinner! Japanese-style rice is a hot dish made from boiled grains seasoned with vinegar and fried chicken with vegetables. The rice turns out crumbly, with a bright taste, and the chicken meat remains juicy and soft, because it is fried very quickly.
Ingredients:
- Round rice – 200 g
- Water – 220 ml
- Rice vinegar – 25 ml
- Sugar – 1 tsp. l.
- Salt – 0.5 tsp. l.
- Chicken fillet – 600 g
- Carrot – 1 pc.
- Bulgarian pepper – 1 pc.
- Garlic (or taste) – 2 cloves
- Ground ginger – 0.5 tsp. l.
- Soy sauce (or to taste) – 3 tbsp. l.
- Vegetable oil – 2 table. l.
Preparation:
Prepare the products. Take ordinary, round-grained rice. In addition to carrots and peppers, you can also add other vegetables – onions, beans, eggplant, broccoli. Adjust the amount of garlic, ginger and soy sauce to your taste. Instead of rice vinegar, ordinary 9% table vinegar, slightly diluted with water, is suitable.
Wash the chicken, dry it and cut it into small pieces.
Wash the carrots, peel them and cut them into strips.
Cut the flesh of the bell pepper in the same way.
Cut the garlic into slices.
Pour sugar and salt into the vinegar, mix.
Wash the rice well in several waters, pour clean cold water. Put the saucepan on high heat, cover with a lid. When the water boils, reduce the heat to low. Boil the rice for 10-15 minutes until the water boils completely. Then turn off the heat and leave the rice under the lid for another 10 minutes. Pour vinegar with sugar and salt into it, mix.
Heat the oil in a pan. Put the pieces of chicken in it so that they lie in one layer (if you have a large portion, fry in parts). Fry the chicken over high heat, stirring, until it changes color. Then push it aside and lay out the vegetables. (If you have a lot of chicken, remove it from the pan). Pour ginger. Also quickly fry the vegetables, then mix them with the chicken and keep them on the fire for another 5 minutes, no more.
Place the rice with the chicken and vegetables, mix. Pour soy sauce and stir again. Taste the dish, if necessary add salt or pour sauce.
Immediately serve the Japanese rice to the table. You can sprinkle with greens.
