One of one of the most important beneficial properties of buckwheat is a high level of phytonutrients, especially flavonoids. These important compounds act in the body as antioxidants that can eliminate free radicals, a chemical byproduct of cellular metabolism that can lead to heart disease.
But that's not all. Buckwheat can also affect other processes in the body and bring health benefits.
For example, a report from the Harvard School of Public Health says that flavonoids reduce the amount of LDL (“bad”) cholesterol in the blood and prevent formation of blood clots, which can lead to atherosclerosis, heart attack and stroke.
Rutin also increases HDL (“good”) cholesterol, which further reduces the likelihood of cardiovascular disease. And this is what is at least necessary for longevity.
