Frozen gifts of nature may contain 50% more vitamins and minerals than fresh plant products purchased at the market, a study has shown.
Scientists have found that frozen fruits and vegetables may be healthier than fresh ones purchased at retail, CNN reports, citing the arguments of experts from the Institute of Plant Health at the University of North Carolina.
According to the researchers, Fruits and vegetables intended for freezing are usually harvested at their peak ripeness, and at this point they contain a high concentration of useful nutrients. Fruits intended for fresh trade are often harvested unripe – this is done with the expectation of further logistics: fruits and vegetables must withstand transportation and storage. There are fewer vitamins and minerals in such fruits than in frozen ones, experts state.
“Fruits harvested at the peak of ripeness for further freezing can contain 10%-50% more nutrients than fruits from the market,” their opinion is given in the CNN report.
Experts advised to prepare frozen products from summer gifts of nature yourself. They emphasized that freezing is the best way to preserve vitamins and other valuable trace elements in vegetables and fruits, which manifest their beneficial properties even after defrosting.
