Some carbohydrate foods are better eaten chilled because it makes them much healthier, nutrition experts say.
Pasta, potatoes, white rice are favorites of many, but they are often rated as food by nutritionists , which contributes to weight gain and obesity. Such a feature provides them with a significant content of starch, which, like many carbohydrates, causes a sharp increase in blood sugar.
Meanwhile, nutritionist Antje Hall from the German Nutrition Society states: these carbohydrate foods become more useful if eaten cold. The expert explained that cooling changes the starch structure of such products – it becomes resistant.
“When starchy products are cooled, they produce resistant starch as a breakdown product. It has a positive effect on the intestinal flora, regulates blood sugar levels and can even help you lose weight,” said Antje Gal.
The expert explained the health benefits that lovers of pasta, rice or potatoes can get if they eat these carbohydrate products not hot, but some that have been in the refrigerator.
Improving the condition of the intestinal flora. According to the specialist, resistant starch that occurs after cooling behaves in the body similarly to fiber – it reaches the large intestine in an undigested form and is gradually broken down by active bacteria there. This, in turn, strengthens the intestinal flora and has a positive effect on digestion.
Normalization of blood sugar. Resistant starch prevents an excessive increase in blood sugar, says a nutritionist. As a result, the body produces less insulin and does not feel a strong desire for high-calorie food.
Reduction of calories. Starchy foods after cooling contain fewer calories than immediately after cooking, emphasizes Antje Gal. If a person gets used to eating pasta, rice or potatoes cold, he can save up to twenty percent of calories on such food.
