Grandma told an ancient recipe for pickled herring

Herring is one of the most favorite dishes of Ukrainians. Recipes for cooking herring are old, with changing taste preferences they changed over time. Among the ancient recipes, there are very interesting ones, in particular this one.

For 5 herrings, we prepare a marinade from the following ingredients:

  • Sugar – 1 tsp. .
  • Mustard – 1 tbsp. l.
  • Vinegar – 4 tbsp. l.
  • Sour cream – 1 tbsp. l.
  • Marinated mushrooms – 1 tsp.
  • Pickled cucumbers – 1 pc.
  • Onion – 1 pc.
  • Salt – small pieces

First, prepare the herring: remove the skin from them, remove the bones and put them in a glass or enamel dish.

Now we start the marinade: rub the milk (caviar) with mustard, sugar and vinegar. Add sour cream and rub the mixture through a sieve. You can blend it in a modern way. Finely chop the mushrooms, cucumber, and onion. Salt and mix thoroughly. Pour this marinade over herrings, cover with cling film and put in the fridge for 4-5 hours.
