Ingredients:

800 g of potatoes
1 eggplant
1 bell pepper
1 carrot
1 onion
tomato puree from 3 tomatoes
herbs to taste
salt, pepper to taste

Preparation:

Peel, cut, grate and fry the onion and carrot, add pepper and fry for another 5 minutes. After that, add chopped potatoes, spices to taste, pour water and simmer for 10-15 minutes.

Cut the eggplant, salt and leave for 10 minutes, then add to the vegetables. Grate the tomatoes or puree with a blender, add to the stew and simmer until done. Salt, pepper and add greens. Delicious!
