How to cook delicious and soft bacon in brine

Traditional Ukrainian product-fat, unchanged everyday product on our table. Try an unusual recipe that involves salting bacon not in the standard way, but in brine. Preparation

  1. first prepare the brine. For each liter of water take 5 tablespoons of salt, 5 cloves of garlic, 2-3 bay leaves, 10 peas of fragrant and black pepper. Add seasonings and spices. Cover the pan and allow the water to cool completely. The proportions are as follows: 1 liter of water for every 0.5 kg of fat.
  2. Cut the fat into small pieces. Then spread them on the jars, trying to do it as tightly as possible.
  3. then fill the fat with cold brine, sealed with nylon lids and put in the refrigerator for salting.
  4. in 3-4 days you can taste. The pieces are dried with paper towels and then “wrapped” in a food film and stored in the freezer. Alternatively, you can rub with chopped garlic before serving.
