How to cook delicious eggplant instead of a side dish for meat

Before preparing the dish, you need to stock up:
- eggplants – 0.5 kg;
- salt – ½ teaspoon;
- onions – 1-2 bulbs;
- lemon juice – 3 tablespoons;

- mayonnaise – 4 tablespoons;
- water – 2-3 tablespoons;
- greens – to taste ;
- oil – for frying.
Step-by-step preparation
- Start cooking the dish by slicing eggplants circles, which are placed in a container, salted and mixed. The circles are left for 5-7 minutes so that the bitterness comes out of them. Thanks to this, the eggplants will not darken during frying. Drain off the liquid that has formed and proceed to the next point.
- Pour oil (2 tablespoons) into the pan and put it on fire. After heating, lay out the eggplants. After turning the circles, add more oil (1-2 tablespoons).
- Cut the onion into quarter rings, put in a bowl, salt, pepper and pour lemon juice. The ingredients are mixed with hands, then allowed to infuse for 5 minutes.
- Mayonnaise is mixed with water (2-3 tablespoons). Next, it remains to assemble the appetizer: eggplants are laid out on the dish, and onions are placed on top. Then pour mayonnaise and decorate with greens.
- The dish should be infused a little and you can serve a juicy and tasty snack to the table.
