How to cook spaghetti carbonara quickly

Ingredients:

  • Spaghetti – 160 g
  • Bacon (pancetta) – 100 g< /li>
  • Eggs – 2 pcs.
  • Hard cheese (pecorino Romano or Parmesan) – 100 g
  • Olive oil – 3 tbsp. l.
  • Black pepper ground to taste

Preparation:

Choose pasta from hard varieties of wheat, it is tastier and does not boil. Eggs must be very fresh, because they are not subjected to strong heat treatment. Be sure to rinse and dry them well before cooking. Instead of bacon, brisket or ham will do.

Cut the bacon into small pieces.

Grate the cheese on a fine grater.

Break the eggs into a small bowl and beat them well with a fork .

Add the cheese to the eggs, reserving a third for serving. And a good dose of freshly ground black pepper.

Mix the ingredients. This will be the base of the sauce.

Take a frying pan, heat it over low heat. Pour in the olive oil and add the chopped bacon. Fry the bacon until the lard is transparent. At the same time, put a pot of water to cook the spaghetti, calculating 1 liter of water for every 100 grams.

Set the pan with the browned bacon aside. Drop the spaghetti into boiling salted water. Do not add too much salt, as the cheese sauce will be salty. Cook the spaghetti according to the time indicated on the package. Be careful not to overcook the pasta, it should remain slightly firm, or al dente.

Then there are two cooking options. You can discard the spaghetti in a colander, and pour the sauce into the pan next to the bacon and heat it up a little. But in this case, there is a possibility that the eggs will curdle. Therefore, transfer the finished spaghetti immediately to the pan with bacon and mix them.

And only then pour the sauce. During this time, the macaroni cools down a little and the eggs do not curdle. It remains to mix the pasta with the sauce well. Spaghetti carbonara is served immediately, hot, sprinkled with cheese and ground pepper. Don't spare the pepper, because it's carbonara.
