To make one serving, that's 30 pieces, you need to take:
- 6 eggs
- 2 tbsp. sugar
- a pinch of salt
- 500 ml of milk
- 300 g of flour
- 1 tbsp. lemon peel (one citrus is enough)
- 200 ml of boiling water
- 1 tbsp. oil
It is necessary to traditionally beat eggs with a pinch of salt. Remember that salt must be added to every dough, even sweet dough.
Then add milk, sugar, lemon zest and beat everything well again. After that, pour the sifted flour, preferably in parts, so that the mass is homogeneous.
At the end, add boiling water and 1 tbsp. add oil to the dough, to the dough itself, and not to the pan, if you want pancakes that turn over quickly and easily.
The pancakes are tender, soft, thin with a pronounced lemon flavor.
