How to cook vegetable caviar with bell pepper

Vegetable caviar is delicious for everyone who loves bell pepper. As a side dish or as an independent dish, appetizer – choose your option. Even just spreading it on bread – it will be perfect for a snack. Read on to learn how to cook it.
Ingredients for cooking
The main component of caviar is bell pepper. Choose meaty varieties, because they are juicier and give more flavor. So, for caviar you will need:
- bell pepper – 2.5 kg;
- carrots – 300 g;
- tomatoes – 300 g;
- onion – 300 g;
- celery – 1 root;
- parsley – 1 root;
- ground black pepper – 1 tsp;
- allspice ground pepper – 1 tsp.
How to cook
Better peppers need to be baked in the oven. Then peel them and clean them of seeds and stalks. Transfer to a blender and chop together with tomatoes and carrots.
Finely chop the parsley and celery roots, onion. Fry everything together in vegetable oil until golden brown.
All prepared ingredients should be combined in one container, add two types of peppers and salt to your taste. Put the vegetable mass on the fire, bring to a boil and simmer for 10 minutes. Stir periodically so that the components are evenly distributed.
The caviar is transferred hot to clean jars and sterilized. Pay attention to the duration requirements. For 0.5 liter jars, sterilization takes about 30 minutes, and for 1 liter jars – 40 minutes.
The bell pepper caviar is ready. When the jars have cooled, move them to a suitable place for storage. Enjoy!
