A simple recipe will please you if you want to try an aromatic vegetable dish. Vegetable pilaf is prepared from rice groats and zucchini. There is no meat in this recipe, but additional ingredients make the dish rich and original.
Ingredients
You will need the following products for cooking:
- zucchini – 1 pc.;
- carrot – 1 pc.;
- onion – 1 pc.;
- bell pepper – 1 pc.;
- tomatoes – 1-2 pcs.;< /li>
- garlic – 1 clove;
- dill – 1 bunch;
- rice – 1 tbsp;
- butter – 30 g;
- vegetable oil – 2 tbsp;
- salt – to taste;
- coriander – ½ tsp;
- dried basil – ½ teaspoon;
- a mixture of peppers – to taste;
- salt – to taste.
Cooking process
First you need to heat the pan, put butter and pour oil. The onion is fried until transparent. Carrots cut into cubes are placed on top. Everything together continues to cook for 2 minutes.
Zucchini should be cut into cubes and added to the pan. Vegetables are stewed until soft. Next is the queue for chopped tomatoes and bell pepper. To give the tomatoes better juice and taste, it is recommended to grate them. Add salt to the vegetable mixture in the pan and stir.
The spice step involves adding a mixture of peppers, dried basil and coriander. Next, rice is poured in, which needs to be washed well before that. All the ingredients loaded into the pan are poured with water so that they are completely covered with liquid.
Vegetable pilaf is stewed for 20 minutes. At the end, grated garlic and dill are added. After that, turn off the fire, let it stand for 5-10 minutes and serve.
