How to cook zucchini stuffed with meat in the oven in an original way

Juicy and aromatic – original and very tasty! Zucchini stuffed with meat in the oven will perfectly diversify your menu. It is unusual that the filling of zucchini “boats” is not the usual minced meat, but fried pieces of meat. The zucchini turn out to be very tasty, fragrant and filling.

Ingredients:

  • Young zucchini – 2 pcs.
  • Meat (pork, chicken, turkey ) – 500 grams
  • Onion – 1 pc.
  • Hard cheese – 100 grams
  • Mayonnaise – 2 tbsp. l.
  • Vegetable oil – 2 table. l.
  • Dry spices – to taste
  • Salt – to taste

Preparation:

Prepare the products. If possible, choose young zucchini – they have a thinner skin and smaller seeds. But ripe zucchini will also work, the only difference is the way they are cut. Choose soft meat, preferably the fillet part of pork, chicken or turkey. The beef may remain firm. Use spices to taste.

Wash the meat and dry it well, because excess moisture will interfere with frying. Cut the pulp into small cubes of approximately 2 by 2 cm.

Peel the onion and cut it into thin half rings.

Heat a frying pan over high heat, add oil for frying. Put the meat. Fry it on all sides until it changes color from pink to gray – this way you seal the juice inside and the meat remains soft. Add onions to the meat.

Salt and add spices. Fry the meat with onions over medium heat for 15-20 minutes. The exact time will depend on the meat you are using. Turn off the heat and let the meat cool a little.

Turn on the oven at 200 degrees. Cut the zucchini in half lengthwise. With a teaspoon, carefully scrape out the center with the seeds, forming a “shuttle”. Be careful not to squeeze the squash flesh. Salt the preparations. If you have a mature zucchini, cut the skin off it, cut it into circles 2 cm thick, cut out the middle.

Grate the cheese on a large grater.

Fill the boats with fried meat. Sprinkle grated cheese on top of the meat, then smear with mayonnaise.

Bake the zucchini stuffed with meat in the oven at a temperature of 200°C for 30-40 minutes. The exact time will depend on the characteristics of your oven and the size of the zucchini. Check readiness by piercing the zucchini flesh – it should become soft.
