How to keep strawberries fresh all year round: without freezing

There is one method of storing strawberries that will allow them to stay fresh all year round.

You will need:

  • 3 kg of strawberries
  • 3 kg of sugar

How to prepare:

In order not to spoil the taste of the preparation, use the freshest berries possible. Inspect them to make sure there is no rot. Then put the strawberries in a large bowl and fill with cold water. Leave for 10 minutes, then rinse gently under running water. This will help clean the berries from insects.

Remove the stems from the strawberries; if the berries are large, you can cut them in half. Sprinkle the bottom of a bowl or saucepan with sugar, then lay out a layer of fruit, sprinkle with sugar again. In this way, pour over all the strawberries, setting aside 300-400 g of sugar.

Now you need to let the berries release their juice. To do this, leave them for 3 hours at room temperature. Periodically gently stir the contents of the bowl so as not to crush the fruits. The sugar will gradually dissolve in the liquid that has separated.

Fill sterilized dry glass jars with berries and syrup, leaving a little free space at the top. Sprinkle the remaining sugar over the containers, distributing it evenly between the jars. All that's left is to roll them up with clean lids.

You can store the strawberry preserves in the refrigerator or another cool place. You don't have to waste time cooking them, and you'll have some space in the freezer for other products. Like regular jam, candied berries can be put in a pie filling or used to make the most delicious dumplings. This way, you can enjoy fragrant strawberries even in the middle of winter.
