How to make an original roasted garlic sauce

Roasted garlic sauce is a taste delight for those who loves deep, rich aromas. Roasted garlic has a milder and more delicate taste than raw, so this sauce is ideal for many dishes: meat, vegetables, pasta or even just bread.
During baking, garlic loses its sharpness and becomes sweet. This happens due to the caramelization of natural sugars, which makes roasted garlic taste much milder than raw.
To prepare the sauce, you will need:
- 2 heads of garlic
- 100 ml of olive oil
- 1 tablespoon of lemon juice
- Salt and pepper to taste
- Fresh herbs (parsley , dill) – optional
Before baking, cut the tops of the heads of garlic so that the cloves are slightly exposed. This will allow them to bake more evenly and make it easier to remove the pulp after cooking.
Start by wrapping the heads of garlic in foil and bake them in the oven at 180°C for 40-45 minutes until the garlic is soft. it will become soft and golden.
When the garlic has cooled, squeeze the pulp from the cloves into a small bowl. Add olive oil, lemon juice, salt and pepper to it.
If desired, you can add finely chopped greens for freshness and flavor. Mix everything well to a uniform consistency.
