How to make caramel-flavored apple pastille

The easiest way to make marmalade (pastilla) is from apples. And this is understandable, because it is the most affordable fruit. And apples have a pleasant taste and aroma that complements the taste of caramel from boiled sugar. An ideal alternative to usual candies.

Ingredients

To prepare marmalade, you need the following components:

  • 2.5 kg of apples;
  • 1 kg of sugar;
  • 100 ml of water.

How to prepare pastille

Wash the apples and cut them into large pieces. Cut out the core from all the fruits. Leave the skin on, because it contains pectin, which will help the mass to thicken.

Transfer the apples into a saucepan, add water. Bring to a boil and cook for 25 minutes. Stir the apples constantly to prevent them from burning. When ready, grind them with a blender. And then pass the mass through a sieve.

Pour sugar into the apple mixture and stir until it is completely dissolved. By the way, the amount of sugar can be less if the fruits are sweet enough. Bring the mass to a boil. Cook again for 20 minutes. Stir so that it does not burn.

Purée must be removed from the stove, cooled and boiled again in the same way for 20 minutes. The mass will darken and become thicker.

Line a baking sheet with parchment. Spread the puree and spread it in an even layer. The height should be approximately 2 cm. Now the marmalade must be dried. If it's sunny outside, you can do it outdoors for 3 days. If not, then in the oven at 80 degrees for 3 hours. Do not close the door, let it be half-open.

When the marmalade becomes elastic enough, then it should be turned onto a baking sheet. Remove the paper. Continue to dry for another 2 hours.

Line a baking sheet with parchment. Spread the puree and spread it in an even layer. The height should be approximately 2 cm. Now the marmalade must be dried. If there is sun outside, you can do it outdoors for 3 days. If not, then in the oven at 80 degrees for 3 hours. Then cool and enjoy. Delicious!
