The main ingredients are classic: flour, eggs and water. The secret is that the protein is whipped separately from the yolk. This way the batter turns out to be airier. The water is taken carbonated. This gives the crust a special crunch.
Cooking method
First, separate the egg white from the yolk and beat it with a pinch of salt. The yolk is pounded with a whisk, adding spices and salt. Then the yolk and egg white are mixed together until smooth.
Then other ingredients are added to the mixture – flour and water. If there is too much flour, you can “save” the batter with the help of beaten egg whites.
The batter is placed in the refrigerator for 10 minutes. In this case, you can achieve a unique crunch if you immediately send the cold batter to a hot frying pan. Add a moderate amount of vegetable oil.
