How to make delicious pumpkin muffins with mushrooms

Do you want to surprise your relatives with something unusual? Pumpkin Mushroom Muffins are what you need! These cupcakes combine the sweet tenderness of pumpkin and the rich taste of mushrooms, creating an incredible balance. They will be a great appetizer or snack, and will also add an autumn atmosphere to your table.

Ingredients:

  • 300 g pumpkin (grated)
  • 150 g fresh mushrooms (champignons or porcini mushrooms)
  • 2 eggs
  • 200 g flour
  • 50 ml of oil
  • 1 teaspoon of baking powder
  • Salt, pepper to taste
  • Greens as desired

First, fry the mushrooms in oil until golden, add salt and pepper to taste. In a large bowl, combine the grated pumpkin, eggs and oil. Gradually add the flour and baking powder, then add the fried mushrooms. The mixture should be thick but uniform.

Spread the batter into greased muffin tins. Bake at a temperature of 180°C for 20-25 minutes until the cupcakes are golden brown and have a nice shape.

For a richer taste, you can add some grated cheese or greens to the dough.
